Tamales

Spent last night making the quickest tamales ever, deciding on a vegan theme and timing them to be in the steamer in around 1 hour. A small batch, to test a few things, including how best stack each step. Kitchen Aid mixer did all the hard work, and I was actually pleased at the results. A bit different than the pork Christmas tamales that took 6+ hours and some cursing in Spanish.

Oooh, I would love to know how you make vegan tamales. I bet it's something better taught than read in a recipe, though. I've never made them! Even though my S-I-L is Mexican and an amazing cook, I'm never there when tamales happen. *sob*

I’m hoping to come up with a good recipe, since we have a lot of vegan and vegetarian friends and it’s fun to experiment.I love the taste of corn masa, so I figured to I would try and highlight that with the help of lots and lots of olive oil and roasted pasilla peppers. Mostly it worked. Learning how to make tamales might be easier today thanks to youtube, but I haven’t really tried learning anything really complicated from their cooking channels. Maybe your SIL will try and rope you in on the wraping part one time, that is when you usually need all hands on deck - it is nice to do them with family :)

She lives in Texas and I live in Seattle, so my timing thus far has not been good. But I think I'll ask her if we can plan to make them next time I come down.
